Recipe of The Week: Mango Salsa

While I've neglected to blog about them (mea culpa, mea maxima culpa) I have been trying out new recipes. This week I made Mango Salsa and served it first with jerk chicken, then again with beef tacos. I love how this turned out: it was delicious!

MANGO SALSA:
  • 2 oranges, peeled and diced
  • 2 yellow mangos, peeled and diced
  • 1/2 cup crushed, canned pineapple
  • 1 small red pepper, diced
  • 1 cup fresh cilantro, chopped
  • 3 green onions, finely chopped
  • 1 tbsp freshly squeezed lime juice
  • 1 tbsp honey
  • 1 pinch salt

Mix it all together, and let chill for at least an hour before serving.

That looks sooooo good!!! And I'll bet it was excellent with both the jerk chicken and beef! I'll be trying this one out soon :)
